Creamy Garlic Yogurt Pasta with Spiced Mince

Ingredients
  

  • 225 g pasta farfalle works well, but any shape is fine
  • Kosher salt
  • 450 g beef mince
  • 1 medium onion chopped (about 1 cup / ~150 g)
  • 1 tablespoon red pepper paste or tomato paste
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 3 teaspoons Pepperbloom spice blend
  • 240 g Greek yogurt plain unsweetened (full-fat or skim)
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 60 g unsalted butter
  • ¼ teaspoon red pepper flakes or more to taste (Aleppo or Urfa chili are great options)
  • ½ teaspoon kosher salt
  • ½ cup cherry tomatoes halved (~80 g)
  • 4 tablespoons dried mint

Method
 

  1. Cook the pasta.
    Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set aside.
  2. Prepare the meat/mince In a large skillet over medium heat.
    add the ground beef. Cook for 4–5 minutes, breaking it apart, until no longer pink and some fat is released. Add the chopped onion and all the seasonings. Stir and cook until the onion is softened and the beef is fully cooked. Remove from heat and set aside.
  3. Make the yogurt sauce.
    In a small bowl, whisk together the Greek yogurt, garlic, lemon juice, and salt. Set aside.
  4. Make the butter sauce.
    Just before serving, melt the butter in a small saucepan over medium heat. Stir in the butter sauce spices and cook until melted and fragrant.
  5. Assemble the dish. Place the cooked pasta into serving bowls. Top with about 4 tablespoons of the yogurt sauce and ⅔ cup of the prepared mince.
    Drizzle with a tablespoon (or more) of the butter sauce.
  6. Finish and serve. Garnish with cherry tomatoes, dried mint (or fresh parsley). Serve immediately.
  7. Serve with chili crisp oil for best results
