Method
- Cook the pasta in salted water until al dente. Drain and drizzle with olive oil to prevent sticking. Let it cool.
- In a large bowl, combine the cooled pasta with raisins, sweet peppers, apricots, and celery if using.
- Add the curry mayo and mix until everything is well coated.
- Taste and season with salt and pepper if needed.
- Chill for at least 30 minutes before serving for the flavours to come together.
