Curry mayo pasta recipe

Creamy Curry Pasta Salad

Ingredients
  

  • 250 g pasta (shells, ribbons, or your favourite shape)
  • 1-2 tbsp Olive Oil
  • +-8 tbsp Raisins
  • 2 Red sweet peppers, chopped
  • 3 Dried apricots, chopped
  • 1-2 Stalks celery, chopped (optional)
  • Salt and black pepper to taste

Method
 

  1. Cook the pasta in salted water until al dente. Drain and drizzle with olive oil to prevent sticking. Let it cool.
  2. In a large bowl, combine the cooled pasta with raisins, sweet peppers, apricots, and celery if using.
  3. Add the curry mayo and mix until everything is well coated.
  4. Taste and season with salt and pepper if needed.
  5. Chill for at least 30 minutes before serving for the flavours to come together.

Serving tip:
Perfect for braais, lunchboxes, or as a light summer meal on its own!
